When chillies remain moist, moulds develop and the chillies will go bad. Some moulds produce a poison, called aflatoxin, which is toxic to people. To speed up drying and to dry your food hygienically you can use a solar dryer that uses the heat of the sun to dry fruits and vegetables.

The key ingredient to making cheese is rennet. This triggers the fats in the milk to bind together as curds, and the rest of the liquid runs off as whey. Whilst you can buy ready-made commercial rennet in liquid or powder form, in Egypt, rural women prefer to use natural rennet from the curds found in a calf’s stomach.

In this age of restricted travel, when webinars have taken the place of conferences, at first, I missed face-to-face meetings a lot. But virtual events do allow one to get exposed to far more ideas than before. This is also the case when digital learning is introduced to farmers. Farmers are increasingly getting information online, like videos. But the videos have to be properly designed. Unlike following a cooking recipe on a YouTube video, in agriculture, recipes must be accompanied by basic principles, so that farmers can decide how to experiment with the new ideas.
